Follow the recipe below for a unique spin on chicken & waffles – Chef Nigel approved!

Brine for Chicken:

Ingredients:

  • 2 chicken breasts boneless, skinless-Slice each chicken breast in half
  • 1 cup buttermilk
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 Tablespoon Chef Nigel’s hot sauce

Instructions:

  1. Take halved chicken breast put in a large zip-lock bag, add buttermilk and hot sauce, salt and pepper.
  2. Seal the bag, shake and mix well.
  3. Let the chicken marinate in the refrigerator for about 4 hours or overnight.

Mixture for Frying Chicken:

Ingredients:

  • 1¼ cup flour
  • ½ cup corn starch
  • 1 teaspoon smoked paprika
  • 1/8 teaspoon cayenne pepper
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dry oregano

Instructions:

  1. In a bowl whisk all dry ingredients together.
  2. Remove the chicken from the refrigerator half an hour before you start to fry (so that the chicken isn’t cold when you put in fryer).
  3. In deep fryer or Dutch cast iron pan, add canola or peanut oil and let heat to 345F-360F.
  4. Remove chicken form zip-lock bag one piece at a time. Drain excess marinade and mix into flour mixture, coating chicken well.
  5. Tap of excess flour and add chicken to fryer. Fry for 8 minutes, turn occasionally with tong until chicken is crispy and golden brown. Transfer cooked chicken to baking rack.

Mixture for Waffles:

Ingredients:

  • 2¼ cup all-purpose flour
  • 1 tablespoon baking powder
  • ½ baking soda
  • ½ teaspoon salt
  • 2 eggs
  • 2 cups buttermilk 
  • 4 tablespoon melted butter

Instructions:

  1. In a large bowl, whisk together buttermilk, eggs, and melted butter. Mix dry ingredients together add wet ingredients, then mix until it turns into batter. Scoop batter onto the center of the waffle iron, making sure it spreads evenly. Close the lid and bake 5-6 minutes until browned and crisp.
  2. Cut waffle into 4 pieces add to plate with a piece of your crispy buttermilk fried chicken. Top with powdered sugar and warm maple syrup. Sprinkle on some chopped chives for garnish. Then eat & enjoy!
