Dish of the Day: Seared Diver Sea Scallops

    IMG_4181      Welcome back! For the dish of the day, I’ve selected Seared Diver Sea Scallops. You might be wondering, what are Diver Scallops? This exceptional choice of seafood is hand-harvested unlike typical wet or dry scallops, and in turn has a smoother texture to it. It  can usually be found in restaurants, as a fine dining go-to.  Overall, scallops are a simple, delicate dish, best prepared without a fuss. I chose to pan-sear mine, giving it a  brown, crispy crust, but preserving the moist tender inside. So as not to offset the flavor, I paired this with a creamy vegetable risotto, as well as white asparagus, a softer, sweeter version to its traditional namesake.
