Dish of the Day: Crab-Stuffed Fillet of Sole

imageWelcome back! Today’s dish is crab-stuffed fillet of sole. This seafood dinner is a lighter, healthier option to heavy red meat, but with the same satisfying flavor. Sole is a fish with a delicate taste and thin, firm fillets, making it an ideal choice for stuffing. I chose crab meat as a filling for its sweetness, lending a more dimensional flavor to the dish. This is paired with wild rice pilaf, as well as sauteed baby and pattypan squash. These summer squashes are a more tender alternative its larger counterparts, with a taste similar to zucchini. To finish, I drizzled this platter with a saffron beurre blanc sauce and breadcrumbs, offering a contrast between buttery and crunchy texture.
